Every Kitchen Needs a Saucier, and It Should Be This One

I’ve never loved a piece of cookware more than this.

I thought I had all of my cookware bases covered with my skillets and pots. Then, Hestan, a brand which makes the best nonstick skillet I’ve ever used, informed me there was something I was missing.

It’s called a saucier, and after testing this one out for three months, I can say for certain it has earned a permanent place in my kitchen. From risotto to miso soup, I’ve been using this one pan for everything, and I have to say, I’ve never felt this way about a piece of cookware before.

Most cookware sets do not include sauciers, but they should. If you’re not familiar, a saucier is a saucepan, but with rounded edges. This means that when you’re making sauce or soup, it’s actually easier to stir, and nothing gets stuck in the corners (because there are no corners). It has pretty much replaced my saucepan altogether because of this one feature.

But Hestan’s saucier is the best I’ve tried (and after learning about this shape and falling in love with it, I tried out several, including Misen’s and OXO’s). It is made with three layers of stainless steel with an aluminum core, which helps it to heat up beautifully — no hot spots here. It is oven-safe up to a whopping 600°F, so if I’m braising, I don’t have to change pots, and it has a 2-quart capacity, which I’ve found to be perfect for everything from reheating soup to boxed mac and cheese.

But beyond its rounded walls and even heating, I need to tell you about my very favorite part of this piece of cookware: I love its rivets. You know, the place where the handle connects to the pan? While typically an afterthought, it shouldn’t be — have you ever gotten a piece of food trapped there only to notice that your pan smells funky? Well, these rivets, unlike any of the other sauciers I tried, are flush with the pan, meaning it’s impossible for this to happen. It’s a genius touch that I appreciate so much.

As if this all weren’t enough, there is even a flared lip on the top of the saucier to make it easier to pour liquids out of it. And since it’s dishwasher-safe, it’s extremely easy to clean, although I have found it simple enough to wipe down with some soap and water, no matter the mess.

If you’re missing a saucier, and you likely are, you need this Hestan one. It’s an absolute game-changer, and pretty much the only piece of cookware I use anymore.
